Foodsafe Level 1

This course is perfect if you are a front-line food service worker such as cook, server, busser, dishwasher, or deli worker who needs to learn about food handling, sanitation, and work safety. Thoroughly review food safety and worker safety information. Hear about the dangers of foodborne illnesses. Learn safety practices to receive, store, prepare and serve food, as well as clean and sanitize. Book and Exam is included in course fee.

Cooking Greek

Make simply delicious traditional Greek food, just like you get in the restaurants! Tonight’s menu includes, a classic greek salad, chicken souvlaki, delicious lemon roasted potatoes, and tzatziki and hummus served with pita bread for dipping! Spice up your skills with mouth-watering Butter Chicken! Learn to prepare this delicious favourite along with Rice Pilaf, Alo Gobi, and Chai Tea so you can make it any time you have a craving. Knife Skills in the Kitchen

Have you ever wondered how the people on TV chop food so fast without cutting their fingers? Sign up for this class to learn how to handle and care for your knives properly, as well as discover different cuts and their applications. Students will leave with their own sharpening stone. Bring your own knife set if possible.

Spice Me Up - Split Peas & Squash

On a cool winter day, this traditional Indian dish warms the heart and soul. It is high in protein and fibre, and is an excellent source of dietary iron. In addition to the main ingredients, the recipe also features ginger, garlic, tomato, and authentic Indian spices, combined to make a thick, satisfying soup that is generally served over fluffy rice pilaf. Take-home recipe provided.  Be sure to bring containers so you can take your culinary masterpieces home to enjoy.

Winter Holiday Baking

This is your chance to complete your annual holiday baking. This intensive baking course gives you the opportunity to practice creating a wide variety of traditional holiday treats. We’ll be making snowflake sugar cookies with royal icing and crystal sugar, traditional Canadian butter tarts, chocolate truffles, and gingerbread biscotti dipped in white chocolate. Be sure to bring containers so you can take your delicious baking home.

Meet the Instructors

Chef David Bensmiller, instructor for UFV Cooking Classes

Chef David Bensmiller is the Chef and Owner of ‘Over the Top Catering’ in Mission. As well as being a Chef/Instructor he has a background in all types of cooking and specializes in special event catering for the Merritt Mountainfest, Nakusp Musicfest, Lilithfair, and LiveCity Downtown at the 2010 Olympics. David also does many other private events including in home fine dining.

 

Chef Raj Bining, Instructor for UFV Cooking Classes.

Chef Raj Bining is a cancer survivor who credits authentic Indian spices for helping put her cancer in remission. Over 5 years ago Raj was diagnosed with an aggressive brain tumour and given two months to live.  At the time, her daughters were six months and six years old and for her the only logical option was to defeat the cancer. After numerous treatments failed to arrest the cancer, an Oncologist recommended Turmeric. A native to India, Raj is anxious to share her love of authentic Indian cooking and the health benefits of Turmeric and other Indian spices.  Raj Bining is living, loving and laughing cancer free in Chilliwack, B.C with her husband and three beautiful girls, and writing a cook book.‌

Chef Carmen Swaine was born and raised in Abbotsford, B.C. She completed a four year apprenticeship program and earned her red seal chef certification at Vancouver Community College and was granted a scholarship for the culinary arts program at Dubrulle French Culinary School. Carmen went on to become head chef of Rowena's Inn on the River for several years before moving to Cortes Island to become head chef at Hollyhock Educational Retreat Center, as well as Hui Ho'olana retreat center in Hawaii. Carmen currently is settled back in Chilliwack and expresses her love for cooking both at home and at UFV where she works as a Relief Instructor for the Culinary Arts Program. We are pleased to welcome her to the team of Part Time Cooking Instructors.
